Ingredients:
- Sourdough bread, 1 slice
- Salt, 1 tsp or to taste
- Prosciutto, 3-4 thin slices
- Peach, sliced
- Burrata, 1 small ball
- Olive oil, 3 Tbsp + ½ tsp/drizzle
- Balsamic glaze, drizzle
- Honey, 2 tsp or drizzle
- Black pepper, freshly cracked, ½ tsp or to taste
Directions:
- Pour 2 tablespoons of olive oil in a heated grill or regular pan on medium-low to medium heat.
- Place the bread in the pan. Brown first side, about 2-4 minutes, flip and season with salt and pepper, then brown the second side, about 30 seconds to 1 minute.
- Transfer to a plate. Let cool for 1 minute.
- Lay the prosciutto on top of the bread.
- In the same pan, add another tablespoon of olive oil (especially if the pan is dry) over medium-low heat. Place peaches in.
- Cook the first side until grill marks form or cook for 1-3 minutes, softened with colour but still a bit firm/holding their shape. Flip and repeat.
- Turn heat off and lay peaches over prosciutto.
- Tear or cut burrata in half with a knife and place and spread on top of the peach slices.
- Drizzle olive oil, balsamic glaze and honey, and crack black pepper atop.
- Serve and enjoy!
